Preparation
- Begin by slicing the onion thinly and mincing the garlic cloves.
- Generously sprinkle the beef roast with salt and pepper.
- In a skillet over medium-high heat, melt half of the butter and sear the beef on each side for 3-4 minutes.
- Place the seared roast into the slow cooker with the sliced onions and minced garlic.
- Pour the beef broth over the roast.
- Cut the remaining butter into small cubes, place on top of the roast, and sprinkle with thyme.
Cooking
- Set the slow cooker to low and cook for 8 hours or on high for 4 hours, until the beef is fork-tender.
- Shred the beef directly in the slow cooker and mix with the juices before serving.
Notes
Adjust seasonings to taste before serving. Can be paired with mashed potatoes or a salad.
