  • 2 pounds beef chuck roast Ideal for slow cooking, becomes tender and flavorful.
  • 8 cloves fresh garlic, minced Use fresh for the best flavor.
  • 1/2 cup unsalted butter Opt for unsalted to control the saltiness.
  • 1 cup beef broth Homemade adds depth, but store-bought is fine.
  • 1 large onion, thinly sliced
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
  • 1 teaspoon dried thyme Adds extra flavor.

Method
 

Preparation
  1. Begin by slicing the onion thinly and mincing the garlic cloves.
  2. Generously sprinkle the beef roast with salt and pepper.
  3. In a skillet over medium-high heat, melt half of the butter and sear the beef on each side for 3-4 minutes.
  4. Place the seared roast into the slow cooker with the sliced onions and minced garlic.
  5. Pour the beef broth over the roast.
  6. Cut the remaining butter into small cubes, place on top of the roast, and sprinkle with thyme.
Cooking
  1. Set the slow cooker to low and cook for 8 hours or on high for 4 hours, until the beef is fork-tender.
  2. Shred the beef directly in the slow cooker and mix with the juices before serving.

Notes

Adjust seasonings to taste before serving. Can be paired with mashed potatoes or a salad.
