Beef & Vegetables
  • 2.5 lbs beef chuck roast, cut into large chunks Offers great flavor and tenderness.
  • 2 lbs baby Yukon Gold potatoes, halved Hold their shape well and require no peeling.
  • 1 medium onion, sliced (optional)
  • 1 cup carrots, chopped (optional)
Seasonings & Sauces
  • 2 tbsp olive oil (for searing, optional)
  • 6 tbsp unsalted butter, melted
  • 5 cloves garlic, minced Adds robust flavor.
  • 1 tsp dried Italian herbs (or a mix of thyme, oregano, basil)
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped (plus more for garnish) Brightens the dish.
  • 1/2 cup low-sodium beef broth Allows control over saltiness.

Method
 

Preparation
  1. Pat the beef chunks dry with paper towels and generously season them with salt and black pepper.
  2. (Optional) Heat the olive oil in a large skillet over medium-high heat. Sear the beef chunks for 2-3 minutes on each side until browned.
Cooking
  1. Place the halved baby potatoes at the bottom of the slow cooker. Layer the seared beef chunks on top, adding onion and carrots if desired.
  2. In a small bowl, melt the butter. Stir in the minced garlic, Italian herbs, red pepper flakes, and chopped parsley.
  3. Pour the beef broth evenly over the beef and potatoes. Drizzle the garlic butter sauce over everything and gently toss to combine.
  4. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the beef is fork-tender and the potatoes are cooked through.
  5. Taste the sauce and adjust the salt and pepper as needed. Let it sit uncovered for about 15 minutes or mash a couple of potatoes into the broth to thicken it.
  6. Transfer the beef and potatoes to a serving platter, spoon any extra sauce over the top, sprinkle with fresh parsley, and serve warm.

Notes

Searing the meat enhances flavor. Adjust cook times as needed. Keep a variety of fresh herbs for added flavor.
