  • 1 teaspoon grated ginger (optional) Brings freshness to the sauce.
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional) Add for heat.
  • 1 tablespoon cornstarch (optional) Use for thickening sauce.
  • 2 tablespoons water (optional) Use for thickening sauce.

Method
 

Preparation
  1. Lightly season the chicken thighs or breasts with salt and black pepper on both sides for a well-rounded flavor.
  2. In a small bowl, whisk together honey, soy sauce, ketchup, minced garlic, ginger (if using), rice vinegar, and red pepper flakes to create a harmonious blend.
  3. Place the seasoned chicken in the slow cooker and pour the sweet, sticky sauce over it, ensuring each piece is well-coated.
Cooking
  1. Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is tender and easily shreds with a fork.
  2. (Optional) For a richer sauce, remove the chicken and transfer the sauce to a saucepan. Mix cornstarch with water and stir into the simmering sauce for 2-3 minutes until thickened.
  3. Return the chicken to the slow cooker or pour the thickened sauce over it. Garnish with sesame seeds and chopped green onions, then enjoy!

Notes

For deeper flavors, marinate the chicken in the sauce for an hour or overnight before cooking. Feel free to adjust seasoning according to taste.
