Preparation
  1. Place the boneless, skinless chicken breasts in your slow cooker, ensuring they’re laid flat.
  2. In a mixing bowl, combine the fresh lemon juice, minced garlic, olive oil, salt, pepper, thyme, rosemary, and parsley until well blended.
  3. Pour the marinade over the chicken breasts, making sure they’re well coated with the zesty mixture.
  4. Layer the chopped vegetables over the chicken, pressing down gently to encourage flavor absorption.
Cooking
  1. Cover the slow cooker, set it on low for 6 hours or high for 4 hours, and let the magic happen.
  2. After cooking, use two forks to shred the chicken if desired, and serve it alongside the flavorful vegetables.

Notes
