Ingredients

Main Ingredients
  • 8 ounces elbow macaroni, cooked al dente Consider whole-grain or gluten-free varieties for a healthier twist.
  • 5 cups sharp Cheddar cheese, grated and divided Opt for sharp Cheddar to maximize flavor; a mix of cheeses can add depth.
  • 12 ounces can evaporated milk If unavailable, whole milk can be used but will yield a slightly different texture.
  • 1.5 cups whole milk
  • 1/4 cup melted butter
  • 2 large eggs, beaten They help bind the dish and create a creamier end result; can be omitted for a vegan version.
  • 1 teaspoon salt
  • 1 dash pepper
  • 1 dash paprika

Method

Preparation
  1. Spray a 4-quart slow cooker with cooking spray to prevent sticking.
  2. In the slow cooker, combine the cooked macaroni, evaporated milk, whole milk, melted butter, salt, pepper, beaten eggs, and all but 1/2 cup of the grated cheese.
  3. Stir everything together until well-mixed and evenly coated.
  4. Sprinkle the remaining 1/2 cup of cheese on top of the mixture, then add a dash of paprika for color and taste.
Cooking
  1. Cover and cook on LOW for 3 hours and 15 minutes or until the cheese is fully melted and bubbly.
  2. Turn off the heat, give the mac and cheese a final stir, and serve hot.

Notes

For an extra creamy texture, stir in an additional splash of whole milk before serving. Adding a little garlic powder or mustard powder can elevate the flavor profile beautifully. This dish can be stretched to accommodate more people by serving it alongside a nice salad or bread.
