Preparation
- Season the chicken breasts generously with salt, pepper, and dried Italian herbs. Arrange them evenly in the slow cooker.
- In a separate bowl, mix together the chicken broth, minced garlic, and grated Parmesan cheese until well combined. Pour this creamy mixture over the chicken.
Cooking
- Cover the slow cooker and cook on low heat for about 4 to 6 hours, until the chicken is cooked through and tender.
- About 30 minutes before serving, add the orzo pasta to the slow cooker and gently stir everything together.
- Once the orzo is tender, use two forks to shred the chicken directly in the slow cooker and mix everything together thoroughly.
Serving
- Serve warm, garnished with fresh parsley.
Notes
Cooking on high may speed up the process. You can also replace chicken with chickpeas or tofu for a vegan version, and seasonings can be adjusted for taste.
