- Start by placing the chicken breasts in the slow cooker, ensuring they’re arranged nicely for even cooking.
- In a mixing bowl, combine the sweet chili sauce, soy sauce, minced garlic, grated ginger, and black pepper. Stir well to blend.
- Pour the sauce mixture over the chicken, ensuring each piece is generously coated.
- Layer on the sliced bell peppers, resting them atop the chicken.
Cooking
- Cover the slow cooker and set it to cook on low for 6-8 hours, or high for 3-4 hours.
- Once done, shred the chicken in the pot using two forks and mix with the sauce.
- Serve hot over rice, garnished with chopped green onions.
Notes
For best results, marinate chicken ahead of time. You can substitute chicken with jackfruit or tofu for a vegan option. Add red pepper flakes for spice if desired.
