  • 1 cup sweet chili sauce Choose a brand with clean ingredients for an authentic taste.
  • 2 tablespoons soy sauce Can use tamari for gluten-free.
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/2 teaspoon black pepper
  • 1 piece red bell pepper, sliced Opt for firm, shiny pepper for great flavor.
  • 1 piece green bell pepper, sliced Opt for firm, shiny pepper for great flavor.
  • cooked rice for serving Jasmine or basmati recommended.
  • chopped green onions for garnish Adds a fresh pop of flavor.

Method
 

Preparation
  1. Start by placing the chicken breasts in the slow cooker, ensuring they’re arranged nicely for even cooking.
  2. In a mixing bowl, combine the sweet chili sauce, soy sauce, minced garlic, grated ginger, and black pepper. Stir well to blend.
  3. Pour the sauce mixture over the chicken, ensuring each piece is generously coated.
  4. Layer on the sliced bell peppers, resting them atop the chicken.
Cooking
  1. Cover the slow cooker and set it to cook on low for 6-8 hours, or high for 3-4 hours.
  2. Once done, shred the chicken in the pot using two forks and mix with the sauce.
  3. Serve hot over rice, garnished with chopped green onions.

Notes

For best results, marinate chicken ahead of time. You can substitute chicken with jackfruit or tofu for a vegan option. Add red pepper flakes for spice if desired.
