Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Season both sides of the chicken breasts generously with salt, pepper, and paprika.
- Heat the olive oil in a skillet over medium heat. Sear the chicken for 2-3 minutes on each side until golden brown. Remove the chicken and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and let it reduce for 1-2 minutes.
- Add the softened cream cheese, stirring until the mixture is smooth, and then incorporate the chopped chives. Adjust seasoning as needed.
- Arrange the seared chicken in the baking dish and pour the creamy garlic sauce over the top. Sprinkle shredded cheddar cheese if desired.
- Bake in the preheated oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C). Broil for an additional 2-3 minutes for a golden top.
- Garnish with fresh parsley before serving warm.
