  • 1 can (10 oz) diced tomatoes with green chilies Select a can with chilies for a hint of spice.

  • 1 cup shredded cheddar cheese

Method
 

Preparation
  1. In your slow cooker, add the chicken breasts, making sure they form a single layer for even cooking.
  2. Sprinkle the ranch seasoning mix generously over the top.
  3. Place the cream cheese directly on top of the seasoned chicken.
  4. Gently pour in the black beans, corn, diced tomatoes, and chicken broth, layering the ingredients neatly.
  5. Cover the slow cooker and set it to low for 6-8 hours or high for 4-5 hours, until the chicken is tender.
  6. Once cooked, shred the chicken in the slow cooker with two forks, mixing everything together until combined.
  7. Stir in the shredded cheddar cheese and let it melt into the warm chili.
  8. Season with salt and pepper, adjusting to taste.
  9. Serve hot, garnished with freshly chopped green onions.
