  • 3-4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets Opt for vibrant green florets for the best flavor and nutrition.
  • 2 cups sharp cheddar cheese, shredded Feel free to swap for a milder cheese if you prefer.
  • 1 can cream of chicken soup (10.5 oz) Can substitute with homemade if desired.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt Adjust to taste.
  • 1/4 tsp black pepper Adjust to taste.
  • 1 cup low-sodium chicken broth
  • 2 tbsp butter

Method
 

Preparation
  1. Chop your broccoli into bite-sized pieces, keeping the florets roughly the same size for even cooking.
  2. Season the chicken breasts with salt and pepper, ensuring they're well-coated for maximum flavor.
  3. In a mixing bowl, whisk together the cream of chicken soup, garlic powder, onion powder, and chicken broth until smooth.
  4. Place the seasoned chicken breasts at the bottom of the crockpot, pouring the creamy mixture over them and stirring gently to coat.
  5. Sprinkle the chopped broccoli on top of the chicken and sauce, distributing evenly.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender and easy to shred.
  2. Just before serving, stir in the shredded cheddar cheese until melted and well-blended.

Notes

To prevent the chicken from drying out, keep the crockpot covered during cooking. Consider adding other cheeses for additional flavor. Adjust seasoning to taste and enjoy!
