  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced Feel free to substitute with any colored bell peppers.
  • 1 green bell pepper, sliced
  • 0.5 yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed Full-fat cream cheese provides a creamier texture.
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta Any tube pasta works well.

Method
 

Preparation
  1. Start by rubbing the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. If time permits, let it marinate for 15-20 minutes for deeper flavor.
  2. Place the seasoned chicken in the slow cooker. Add the sliced red and green bell peppers, yellow onion, and pour in the chicken broth.
Cooking
  1. Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and thoroughly cooked.
  2. Remove the chicken from the slow cooker, shred it with two forks, then return it to the pot.
  3. Incorporate the cream cheese and shredded Parmesan cheese, stirring until melted and creamy. Allow another 10-15 minutes on low.
  4. Meanwhile, cook the pasta in a separate pot according to package instructions until al dente. Drain and mix into the creamy chicken mixture.
  5. Ladle into bowls and garnish with fresh parsley, additional Parmesan, or crushed red pepper flakes.

Notes

You can prep the ingredients a day ahead for a quick meal. The cooked mixture can last up to 6 months in the freezer. Serve with a green salad or garlic bread.
