Preparation
- Start by rubbing the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. If time permits, let it marinate for 15-20 minutes for deeper flavor.
- Place the seasoned chicken in the slow cooker. Add the sliced red and green bell peppers, yellow onion, and pour in the chicken broth.
Cooking
- Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and thoroughly cooked.
- Remove the chicken from the slow cooker, shred it with two forks, then return it to the pot.
- Incorporate the cream cheese and shredded Parmesan cheese, stirring until melted and creamy. Allow another 10-15 minutes on low.
- Meanwhile, cook the pasta in a separate pot according to package instructions until al dente. Drain and mix into the creamy chicken mixture.
- Ladle into bowls and garnish with fresh parsley, additional Parmesan, or crushed red pepper flakes.
Notes
You can prep the ingredients a day ahead for a quick meal. The cooked mixture can last up to 6 months in the freezer. Serve with a green salad or garlic bread.
