  • 1 tablespoon olive oil Use good-quality extra virgin olive oil.

  • Parmesan cheese for garnish Optional; freshly grated is best.

Preparation
  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Season the chicken breasts generously with salt and pepper on both sides.
Cooking
  1. Add the chicken to the skillet, cooking for about 5-7 minutes on each side, or until the internal temperature reaches 165°F and the outside is golden brown.
  2. Once cooked, remove the chicken from the skillet and set aside.
  3. In the same skillet, add the basil pesto and cherry tomatoes, stirring gently until combined.
  4. Return the chicken to the skillet, coating it generously with the pesto sauce and warming it through for an additional 2-3 minutes.
  5. Serve warm, garnished with freshly grated Parmesan cheese if desired.

Notes

Marinate chicken with pesto a few hours in advance for enhanced flavor. Store leftovers in an airtight container for up to 3 days.
