Preparation
- Heat olive oil in a skillet over medium heat until shimmering.
- Season the chicken breasts generously with salt and pepper on both sides.
Cooking
- Add the chicken to the skillet, cooking for about 5-7 minutes on each side, or until the internal temperature reaches 165°F and the outside is golden brown.
- Once cooked, remove the chicken from the skillet and set aside.
- In the same skillet, add the basil pesto and cherry tomatoes, stirring gently until combined.
- Return the chicken to the skillet, coating it generously with the pesto sauce and warming it through for an additional 2-3 minutes.
- Serve warm, garnished with freshly grated Parmesan cheese if desired.
Notes
Marinate chicken with pesto a few hours in advance for enhanced flavor. Store leftovers in an airtight container for up to 3 days.
