- Pound the chicken breasts to an even 1” thickness using a meat mallet, then season both sides with salt and pepper.
- In a skillet over medium-high heat, melt 1 tablespoon of butter and add olive oil. Sear the chicken until golden brown, roughly 4-5 minutes per side. Remove to a plate and set aside.
- Lower the heat to low and add the remaining butter. Stir in flour and cook for about one minute, letting it turn slightly golden.
- Pour in chicken broth, scraping up any browned bits stuck to the pan—this adds great flavor!
- Add milk, sour cream, onion powder, garlic powder, Italian seasoning, and ranch seasoning mix. Stir well until the mixture combines into a smooth sauce.
- Return the chicken and any plate juices back to the pan. Spoon the sauce generously over the chicken and let it simmer until heated through and slightly thickened.
- Dish up the creamy ranch chicken hot, topped with fresh parsley if using. Enjoy this delightful dish with your favorite sides!
