Preparation
- Cook pasta according to package directions. Drain and cool for 5 minutes.
- While the pasta cooks, whisk together all poppy seed dressing ingredients until emulsified.
- Stir remaining salad ingredients into the cooled pasta.
- Toss the pasta salad with the dressing and adjust feta and almonds according to taste.
- Cover and refrigerate the salad for up to a week. It tastes best on days 2 or 3.
Notes
This salad is great for potlucks and can be made ahead of time. Additional veggies or proteins can be added to make it a heartier meal.
