  • 2 cups Fresh spinach Look for vibrant green leaves and wash them thoroughly; frozen spinach can also work.
  • 1 cup Heavy cream Half-and-half or milk can be used for a lighter version, but the sauce will be less rich.
  • 3 cloves Garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Italian seasoning

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning. Add them to the skillet and cook until golden brown, about 5-7 minutes per side, until the internal temperature reads 165°F.
  3. Remove the chicken from the skillet and set aside to rest.
Cooking
  1. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant and the tomatoes begin to soften.
  2. Stir in the heavy cream and grated Parmesan cheese, mixing well to create a creamy sauce. Add fresh spinach, cooking until wilted and well combined.
  3. Return the chicken to the pan, ensuring it is well coated with the creamy mixture. Cook for an additional minute to reheat the chicken thoroughly.
  4. Serve warm, drizzling any leftover sauce over the chicken.

Notes

For best results, use a meat thermometer to ensure the chicken is perfectly cooked. Allow cream to simmer gently; high heat can cause it to separate. Add lemon juice before serving for a bright contrast.
