  • 1/2 cup panko breadcrumbs These add extra crunch; substitute with regular breadcrumbs if necessary.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 2 large eggs Whisk until blended smoothly.
  • 2 tablespoons olive oil or melted butter Drizzle over chicken for added moisture and flavor.

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it with cooking spray.
  2. In a shallow bowl, combine the shredded cheddar cheese, panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper until well mixed.
  3. In a separate shallow bowl, whisk the eggs until blended smoothly.
  4. Dip each chicken breast into the egg wash, coating thoroughly, then dredge it in the cheddar breadcrumb mixture. Press lightly to ensure it sticks well.
  5. Arrange the coated chicken breasts on the prepared baking sheet and drizzle olive oil or melted butter over each piece.
Cooking
  1. Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the tops are golden brown.
  2. Let the chicken rest for 5 minutes before slicing and serving.

Notes

Ensure even cooking by using chicken breasts of uniform thickness. For extra cheesiness, mix in different cheeses. Allow chicken to rest after baking for best juiciness.
