Preparation
- Season both sides of the chicken breasts with salt and pepper, ensuring an even layer for flavor.
- Heat olive oil in a skillet over medium-high heat. Carefully add the chicken, cooking for 5-6 minutes per side until golden brown and crispy. Once done, remove the chicken from the skillet and set it aside on a warm plate.
- Lower the heat, then add minced garlic to the skillet. Sauté for about 30 seconds, allowing the garlic to become fragrant without burning.
- Pour in the cream, stirring continuously to combine with the garlic. Add Italian seasoning and grated parmesan cheese, mixing until the sauce is smooth and creamy.
- If using, stir in the chopped spinach, and let the sauce simmer for 2-3 minutes until the spinach wilts.
- Return the cooked chicken to the pan, spooning the creamy sauce generously over each piece. Allow it all to simmer together for just one minute before removing from heat.

Notes
For an extra-crispy finish, dredge the chicken breasts in panko breadcrumbs before frying. Prepare the chicken up to a day in advance by seasoning and storing it in the fridge. To freeze, let the chicken cool fully, then store in an airtight container for up to three months. Thaw overnight in the fridge before reheating.
