  • 1 cup chicken broth, low sodium Homemade enhances flavor; low-sodium is recommended.
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt to taste Approximately 1/2 teaspoon.
  • 1/4 teaspoon black pepper to taste Approximately 1/4 teaspoon.
  • 1 tablespoon olive oil or butter (optional, for searing) Searing enhances flavor.

Method
 

Preparation
  1. Pat the chicken breasts dry with paper towels and season both sides lightly with salt, pepper, onion powder, and garlic powder.
  2. Heat olive oil or butter in a skillet and sear chicken breasts for 2-3 minutes on each side until golden brown.
  3. In a medium bowl, combine softened cream cheese, sour cream, and chicken broth. Whisk until smooth, then add thyme, salt, and pepper.
  4. Place seared chicken breasts in the slow cooker and pour the creamy sauce evenly over the chicken.
Cooking
  1. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken reaches 165°F (74°C).
  2. Shred the chicken in the sauce, or leave it whole, stirring gently to combine.
  3. Sprinkle chopped parsley on top before serving.

For maximum flavor, consider searing chicken and tasting the sauce before serving.
