  • 4 pieces boneless, skinless chicken breasts Opt for organic chicken for a healthier choice.
  • 1 packet dry ranch dressing packet Homemade seasoning can be made using dried herbs.
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 1 10 oz can Rotel diced tomatoes and green chilies Do not drain.
  • 1 15 oz can whole kernel corn Drained.
  • 1 15 oz can black beans Drained and rinsed.
  • 1 8 oz block plain cream cheese Use low-fat for a lighter version.
  • 2 pieces fresh squeezed limes Always use fresh limes instead of bottled juice.
  • ½ cup chicken broth

Method
 

Cooking Instructions
  1. Place chicken breasts in the Crock Pot.
  2. Add drained black beans, drained corn, Rotel diced tomatoes, onion powder, ranch seasoning, and black pepper.
  3. Squeeze fresh lime juice over the top. Then pour chicken broth over ingredients and place the cream cheese block on top.
  4. Place the lid on the slow cooker. Cook on HIGH for 3-4 hours or on LOW for 5-6 hours.
  5. The chicken is done when it reaches an internal temperature of 165 degrees.
  6. Remove chicken from the Crock Pot. Using two forks, shred the chicken and add it back into the Crock Pot.
  7. Stir all the ingredients together until the cream cheese coats everything.
  8. Serve while hot and enjoy!

Notes

For options, substitute chicken with cubed tofu for a vegan variation or replace cream cheese with Greek yogurt for a lighter profile. Serve with rice or tortillas.
