Method
 

Preparation
  1. In a crock pot, combine chicken, sausage, bell pepper, onion, celery, chicken broth, diced tomatoes, rice, Cajun seasoning, salt, and pepper.
  2. Stir well to combine all the ingredients until evenly mixed.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the rice is tender.
  4. Once done, fluff the rice and serve garnished with green onions for an extra touch of freshness.

Storing leftovers can extend the dish's usability. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
