Ingredients

Main Ingredients
  • 907 g yellow potatoes (scrubbed and quartered) A great choice for their creamy texture after cooking.
  • 120 g yellow onion (diced)
  • 340 g smoked sausage (sliced) Using turkey or chicken sausage can reduce fat.
  • 2 cans cut green beans (drained, 14.5 oz each) Fresh beans can enhance the dish.
  • 113 g unsalted butter (1 stick) Adding the butter whole creates a creamy finish.
  • 0.6 packet Italian dressing seasoning mix Check for gluten-free options if needed.
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (or regular paprika) Adjust spices to personal taste if desired.

Method

Preparation
  1. Place the quartered potatoes into the bottom of your slow cooker. Sprinkle with salt, pepper, garlic powder, onion powder, and smoked paprika. Add in the diced onions and give everything a quick toss to coat.
  2. Top the potatoes with sliced smoked sausage. Add the drained green beans over that, then sprinkle the Italian dressing seasoning evenly across the surface.
  3. Place the full stick of butter right on top of the layers — no need to stir.
Cooking
  1. Cover and cook on Low for 6–7 hours or High for 3–4 hours until the potatoes are fork-tender and the flavors have blended beautifully.
  2. Gently stir everything together before serving to mix in all that buttery flavor. Serve warm, as-is, or with a slice of crusty bread to soak up the juices.

Notes

Consider incorporating seasonal vegetables for added color and flavor. This dish freezes well; portion into freezer-safe bags for later enjoyment.
