  • 2 tbsp Cajun seasoning blend Adjust according to your preferred spice level.
  • 1/2 cup unsalted butter (cubed) Use high-quality butter for a rich sauce.
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream Full-fat cream for best texture.
  • 1 tbsp cornstarch (mixed with 1 tbsp cold water) Used to thicken the sauce.
  • 1 cup long grain white rice (uncooked) Cook according to package instructions.
  • 2 tbsp fresh green parsley (finely chopped) For garnish.
  • 1 tsp coarse black pepper
  • 1/2 tsp red paprika flakes

Preparation
  1. Start by seasoning the chicken breasts with the Cajun seasoning, ensuring each piece is evenly coated.
Cooking
  1. Place the seasoned chicken into the crockpot. Add the cubed butter on top, followed by chicken broth and heavy cream.
  2. Cover and cook on low for about 6 hours or on high for approximately 3 hours. The chicken should be tender and easily shreddable.
  3. In the final 30 minutes of cooking, mix cornstarch with cold water in a small bowl. Stir this mixture into the crockpot to thicken the sauce.
Finishing Touches
  1. About 20 minutes before serving, cook the rice according to the package instructions.
  2. Once cooked, shred the chicken in the crockpot and stir to combine with the sauce. Serve over rice, garnished with fresh parsley and a sprinkle of black pepper and paprika flakes.

Notes

Marinate the chicken overnight with Cajun seasoning for deeper flavor. Allow leftovers to cool before storing in an airtight container for up to 3 days.
