  • 1 cup chicken broth Can add more for extra sauciness.
  • 8 ounces cream cheese, softened Ensure it's softened for easy blending.
  • 1 cup shredded cheddar cheese Reserve a bit for topping.
  • 1 cup shredded mozzarella cheese Reserve a bit for topping.
  • 1 cup frozen mixed vegetables (optional) Can enhance flavor and add nutrients.
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Place the boneless, skinless chicken breasts at the bottom of your crockpot.
  2. In a mixing bowl, combine the cream of chicken soup, ranch seasoning mix, and chicken broth. Stir until smooth.
  3. Cut the softened cream cheese into small cubes and add it to the bowl of the soup mixture. Mix until creamy.
  4. Pour the soup mixture over the chicken, ensuring it coats the chicken completely.
  5. Sprinkle the shredded cheddar and mozzarella cheeses on top, saving some for later.
  6. If using, toss in the mixed vegetables.
Cooking
  1. Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is fully cooked.
  2. Shred the chicken directly in the crockpot using two forks, mixing it with the cheesy sauce.
  3. Sprinkle the reserved cheese on top and allow it to melt before serving.
  4. Garnish with fresh parsley before serving.

Notes
