Preparation
- Place the boneless, skinless chicken breasts at the bottom of your crockpot.
- In a mixing bowl, combine the cream of chicken soup, ranch seasoning mix, and chicken broth. Stir until smooth.
- Cut the softened cream cheese into small cubes and add it to the bowl of the soup mixture. Mix until creamy.
- Pour the soup mixture over the chicken, ensuring it coats the chicken completely.
- Sprinkle the shredded cheddar and mozzarella cheeses on top, saving some for later.
- If using, toss in the mixed vegetables.
Cooking
- Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is fully cooked.
- Shred the chicken directly in the crockpot using two forks, mixing it with the cheesy sauce.
- Sprinkle the reserved cheese on top and allow it to melt before serving.
- Garnish with fresh parsley before serving.
