Preparation
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika. Ensure even coverage.
- (Optional) Sear the chicken in olive oil over medium heat for 2-3 minutes on each side until lightly browned.
- Place the seasoned chicken in the crockpot, laying it in a single layer for even cooking.
- In a bowl, whisk together chicken broth, cream of chicken soup, and dried thyme, if using. Pour this over the chicken.
Cooking
- Cover and set your slow cooker to low for 6 hours or high for 3 hours.
- In the last 30 minutes, mix cornstarch and water to create a slurry. Stir into the crockpot to thicken the gravy.
- If desired, shred the chicken with two forks once fully cooked. Garnish with chopped parsley and serve hot!
Notes
Consider using jackfruit or firm tofu for a vegan option. Searing the chicken is optional but adds flavor. You can also add vegetables to the crockpot for a one-pot meal.
