  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 2 cups chicken broth (low-sodium) Opting for low-sodium allows control over seasoning.
  • 1 can cream of chicken soup (10.5 oz) Choose a brand with all-natural ingredients.
  • 1 tbsp cornstarch Helps thicken the gravy.
  • 2 tbsp water For cornstarch slurry.
  • 1 tbsp olive oil (optional, for searing) Adds depth of flavor.
  • 1/4 tsp dried thyme (optional)
  • 1 tbsp fresh parsley (chopped, for garnish)

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika. Ensure even coverage.
  2. (Optional) Sear the chicken in olive oil over medium heat for 2-3 minutes on each side until lightly browned.
  3. Place the seasoned chicken in the crockpot, laying it in a single layer for even cooking.
  4. In a bowl, whisk together chicken broth, cream of chicken soup, and dried thyme, if using. Pour this over the chicken.
Cooking
  1. Cover and set your slow cooker to low for 6 hours or high for 3 hours.
  2. In the last 30 minutes, mix cornstarch and water to create a slurry. Stir into the crockpot to thicken the gravy.
  3. If desired, shred the chicken with two forks once fully cooked. Garnish with chopped parsley and serve hot!

Notes

Consider using jackfruit or firm tofu for a vegan option. Searing the chicken is optional but adds flavor. You can also add vegetables to the crockpot for a one-pot meal.
