Ingredients

Main ingredients
  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs) Look for fresh, plump chicken breasts for the best texture and flavor.
  • 4 cloves fresh garlic, minced Fresh garlic offers a fragrant kick; however, jarred minced garlic can be a convenient substitute.
  • 4 cups low-sodium chicken broth Low-sodium options let you control the salt content better.
  • 8 oz cream cheese (full-fat) Full-fat versions yield a creamier texture, but light cream cheese can work if you're watching calories.
  • 12 oz frozen cheese tortellini Use cheese tortellini for a classic taste.
  • 2 cups fresh spinach (or 1 cup frozen) Fresh spinach adds vibrant color and nutrients; frozen spinach is a great alternative, just make sure to thoroughly drain it.
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste Always adjust the salt and pepper at the end to enhance the dish.

Method

Preparation
  1. Dice the chicken into bite-sized pieces and mince the garlic.
  2. In the crockpot, combine the diced chicken, minced garlic, chicken broth, cream cheese, and dried herbs. Stir well to mix everything together.
Cooking
  1. Cover and cook on low for 6 hours or high for 3 hours, allowing the flavors to meld perfectly.
  2. About 30 minutes before serving, stir in the frozen tortellini and fresh spinach.
  3. Before serving, taste and adjust seasoning with salt and pepper to ensure it’s just right.

Notes

Timing is key; the extended cook time allows the flavors to deepen. For added depth of flavor, consider browning the chicken in a skillet before adding it to the crockpot.
