- Season the chicken breasts liberally with salt, black pepper, and paprika. Place them in the bottom of your crockpot in a single layer to ensure even cooking.
- In a mixing bowl, whisk together the heavy cream, chicken broth, Italian seasoning, minced garlic, and red pepper flakes until the mixture is smooth and well combined.
- Pour this rich cream mixture evenly over the chicken and sprinkle the chopped sun-dried tomatoes on top to distribute the flavor.
- Cover the crockpot and cook on low for 3-4 hours or until the chicken is tender and reaches an internal temperature of 165°F.
- About 30 minutes before serving, stir in the grated parmesan cheese, allowing it to melt into the sauce.
- Just before serving, garnish with fresh basil. Serve this dish over rice, pasta, or mashed potatoes.
