Ingredients

Main Ingredients
  • 2 lbs boneless, skinless chicken thighs Thighs are recommended for tenderness.
  • 1 cup peanut butter (smooth or crunchy) Use natural varieties for a healthier option.
  • 1 cup coconut milk Full-fat coconut milk is recommended for creaminess.
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar Can be substituted with maple syrup or coconut sugar.
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon red pepper flakes Adjust to your spice tolerance.
  • Chopped cilantro for garnish Adds freshness to the dish.

Method

Preparation
  1. In a slow cooker, combine the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, grated ginger, and red pepper flakes. Stir until well blended and smooth.
  2. Add the chicken thighs to the slow cooker, making sure they are fully coated with the luscious peanut sauce.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fork-tender and shreds easily.
  2. Once cooked, shred the chicken within the sauce using two forks, allowing the flavors to blend beautifully.
Serving
  1. Serve over rice or noodles, and finish with fresh chopped cilantro.

Notes

For a deeper flavor, consider searing the chicken thighs in a pan before adding them to the slow cooker. Adjust flavors by tasting the sauce after cooking.
