  • 1 medium onion, chopped Use fresh for best flavor.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder Adjust according to heat preference.
  • 4 cups chicken broth
  • Salt and pepper to taste Always taste before serving.

Method
 

Preparation
  1. Layer the chicken breasts at the bottom of your crockpot.
  2. Add the drained white beans, corn, diced tomatoes, chopped onion, minced garlic, ground cumin, chili powder, and chicken broth.
  3. Season with salt and pepper to taste.
  4. Gently stir to combine all ingredients evenly.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
  2. About 30 minutes before serving, shred the chicken directly in the pot using two forks.
  3. Stir to incorporate the shredded chicken and allow it to warm through for the last half hour of cooking.
Serving
  1. Ladle the chili into bowls and garnish with your favorite toppings, such as sour cream, shredded cheese, or fresh cilantro.

Notes

For a creamier texture, stir in cream cheese or half-and-half towards the end of cooking.
