Main Ingredients
  • 1 pound chicken breasts or thighs Breasts are leaner; thighs add richness.
  • 8 pieces corn tortillas Fresh or store-bought, warm for best texture.
  • 1 medium onion, diced Red onions are milder and sweeter.
  • 1/2 cup cilantro, chopped Fresh adds brightness, can be omitted if desired.
  • 2 pieces lime, for garnish Juice just before serving.

Preparation
  1. Combine lime juice, minced garlic, cumin, and chili powder in a bowl.
  2. Add chicken, ensuring it’s well-coated, and marinate for at least 30 minutes.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Cook the marinated chicken for about 6-7 minutes on each side, until fully cooked and juices run clear.
  3. After grilling, let the chicken rest for a few minutes before slicing it into thin strips.
Assembling
  1. Warm the corn tortillas on the grill or in a skillet until soft and pliable, about 30 seconds each side.
  2. Begin with a tortilla, add a generous portion of sliced chicken, and finish with diced onions, fresh cilantro, and a squeeze of lime juice.

Notes

For best results, marinate chicken for up to 2 hours. Add guacamole or salsa for extra flavor. Enjoy with warm tortilla chips and homemade guacamole.
