  • 1 cup feta cheese, crumbled Can substitute with a vegan alternative.
  • 1/2 teaspoon garlic powder

  • 1 cup cherry tomatoes, halved

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the Greek yogurt, diced cucumber, fresh dill, garlic powder, salt, and pepper.
  3. In a casserole dish, layer the shredded chicken, followed by the cooked rice or quinoa.
  4. Spread the yogurt mixture evenly over the chicken and rice.
  5. Top with crumbled feta cheese and halved cherry tomatoes.
  6. Bake for 25-30 minutes, or until the casserole is heated through and slightly bubbly.

Notes

Use room-temperature yogurt for easier spreading. For a browned top, broil for the last 2 minutes while watching closely. Taste before baking to ensure proper seasoning.
