Preparation
- Place the chicken breasts at the bottom of your crockpot, ensuring even coverage for cooking.
- In a mixing bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, minced ginger, and black pepper until well blended.
- Pour the sauce mixture over the chicken, making sure each piece is coated thoroughly.
Cooking
- Cover your crockpot and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and easily shreds.
- Carefully remove the chicken from the crockpot and place it on a cutting board. Use two forks to shred it into bite-sized pieces.
- Mix the cornstarch with water to create a slurry. Add this to the sauce in the crockpot and let it thicken for about 15 minutes on high heat.
- Return the shredded chicken to the pot and stir everything together until well combined.
