For the Chicken and Sauce
  • 2 pounds boneless, skinless chicken breasts Use fresh or frozen.
  • 1 cup low-sodium soy sauce Opt for low-sodium to control saltiness.
  • 1/2 cup honey Substitute with maple syrup or agave nectar for a vegan version.
  • 1/4 cup rice vinegar Can use apple cider vinegar if needed.
  • 1 tablespoon sesame oil Adds depth to the flavor.
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon cornstarch For thickening the sauce.
  • 1 tablespoon water To mix with cornstarch.
For Garnish
  • Sesame seeds For garnish.
  • Sliced green onions For garnish.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your crockpot, ensuring even coverage for cooking.
  2. In a mixing bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, minced ginger, and black pepper until well blended.
  3. Pour the sauce mixture over the chicken, making sure each piece is coated thoroughly.
Cooking
  1. Cover your crockpot and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and easily shreds.
  2. Carefully remove the chicken from the crockpot and place it on a cutting board. Use two forks to shred it into bite-sized pieces.
  3. Mix the cornstarch with water to create a slurry. Add this to the sauce in the crockpot and let it thicken for about 15 minutes on high heat.
  4. Return the shredded chicken to the pot and stir everything together until well combined.
Serving
  1. Enjoy your teriyaki chicken over a bed of rice or noodles, garnished with sesame seeds and sliced green onions for that beautiful finish.

Notes

For added spice, include red pepper flakes or sriracha in the sauce. You can also add chopped vegetables like carrots or bell peppers to the crockpot for extra nutrition and flavor.
