Preparation
- Sauté chopped onion in a tablespoon of butter or oil over medium heat until translucent (5-7 minutes).
- Add cooked chicken, cream of chicken soup, sour cream, and milk to the skillet with the onions. Stir until well combined.
- Stir in salt, pepper, red pepper flakes, onion powder, garlic powder, and dried thyme. Fold in thawed frozen mixed vegetables.
- In a separate bowl, combine cooked egg noodles with the chicken mixture. Stir in half of the cheddar cheese.
- Pour the mixture into a lightly greased 9x13 inch baking dish. Sprinkle with the remaining cheddar cheese and crushed Ritz crackers.
- Bake at 375°F (190°C) covered for 20 minutes, then uncovered for another 15-20 minutes, until bubbly and golden brown. Let rest for 5-10 minutes before serving.
Notes
Serve with a crisp green salad or buttered dinner rolls for a complete meal. This dish can be prepared ahead of time and stored in the refrigerator.
