  • 2 cups baby carrots Sliced regular carrots can be used if preferred.
  • 5 stalks celery (chopped) Choose crisp and fresh celery for best taste.
  • 2 packets brown gravy mix Consider using low-sodium for a healthier option.
  • 1 packet Lipton onion soup mix Enhances the umami flavor.
  • 2 cups water
  • 1/4 cup butter Can swap with olive oil for a dairy-free alternative.
  • 1 container 24 oz refrigerated mashed potatoes Or make your own.

Method
 

Preparation
  1. Place the frozen meatballs, baby carrots, and chopped celery into your slow cooker.
  2. In a small bowl or large measuring cup, whisk together the brown gravy mix with the water. Pour the mixture into your slow cooker and toss with the meatballs and veggies.
  3. Sprinkle the packet of onion soup mix over top.
  4. Slice the butter into small pieces and evenly distribute them over the top.
Cooking
  1. Cook on LOW for 3-4 hours, stirring halfway through to ensure even cooking and incorporation of flavors.
Serving
  1. Just before serving, prepare the mashed potatoes according to the package instructions. Enjoy!
