Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a large baking sheet by lining it with parchment paper or a silicone mat.
  2. In a medium-sized bowl, combine the cooked shredded chicken with BBQ sauce, ensuring each piece is well coated.
Assembly
  1. On the prepared baking sheet, create a layer with half of the tortilla chips, followed by half of the BBQ chicken mixture and half of the shredded cheese.
  2. Add a second layer with the remaining chips, followed by the rest of the chicken and cheese.
Baking
  1. Sprinkle chopped jalapeños and red onion over the nachos.
  2. Bake for about 11-13 minutes, or until the cheese is melted and bubbly.
  3. Once out of the oven, drizzle with queso blanco and additional BBQ sauce, then return to the oven for another 3-4 minutes.
  4. Serve immediately, topped with fresh cilantro and any other desired toppings.

Notes

Keep an eye on the queso while baking; adjust bake time to avoid overcooking. Serve directly from the pan to enhance the communal dining experience.
