Preparation
- Preheat your oven to 350°F (175°C) and prepare a large baking sheet by lining it with parchment paper or a silicone mat.
- In a medium-sized bowl, combine the cooked shredded chicken with BBQ sauce, ensuring each piece is well coated.
Assembly
- On the prepared baking sheet, create a layer with half of the tortilla chips, followed by half of the BBQ chicken mixture and half of the shredded cheese.
- Add a second layer with the remaining chips, followed by the rest of the chicken and cheese.
Baking
- Sprinkle chopped jalapeños and red onion over the nachos.
- Bake for about 11-13 minutes, or until the cheese is melted and bubbly.
- Once out of the oven, drizzle with queso blanco and additional BBQ sauce, then return to the oven for another 3-4 minutes.
- Serve immediately, topped with fresh cilantro and any other desired toppings.
Notes
Keep an eye on the queso while baking; adjust bake time to avoid overcooking. Serve directly from the pan to enhance the communal dining experience.
