Ingredients
  

For the Salmon
  • 2 fillets salmon fillets Look for bright, moist fillets.
For the Mango Salsa
  • 1 ripe mango, diced Choose ripe mangoes that yield slightly to pressure.
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced For milder salsa, remove the seeds.
  • 1 lime Juice of 1 lime Fresh lime juice enhances flavor.
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional) Substitute with parsley if desired.

Cooking
  1. Preheat the grill or a skillet over medium-high heat.
  2. Season the salmon fillets generously with salt and pepper.
  3. Cook the salmon for 4-5 minutes on each side, or until it flakes easily with a fork.
  4. In a bowl, combine the diced mango, red bell pepper, red onion, jalapeño, lime juice, and cilantro. Mix well until all ingredients are coated in the lime juice.
  5. Serve the salmon topped with the mango salsa, encouraging everyone to dig in while it’s hot!

Notes

Make the mango salsa ahead of time and store in the refrigerator to meld the flavors. Use a meat thermometer to ensure salmon is cooked to 145°F for best results.
