  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs
  • 1 bunch asparagus, trimmed Approximately 1 lb
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced Fresh gives the best flavor
  • 1/2 cup grated Parmesan cheese Freshly grated melts better
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Method
 

Preparation
  1. Lightly season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
Cooking Chicken
  1. In a large skillet over medium-high heat, melt 2 tablespoons of butter.
  2. Once sizzling, add the chicken breasts and sear for about 6-7 minutes on each side until golden brown and cooked through.
  3. Transfer the chicken to a plate and cover to keep warm.
Cooking Asparagus
  1. In the same skillet, add the remaining 2 tablespoons of butter and then the asparagus.
  2. Cook for 2-3 minutes until they are tender-crisp.
  3. Add the minced garlic to the asparagus and stir, cooking for about a minute until fragrant.
Finishing Touches
  1. Return the chicken to the skillet with the asparagus.
  2. Sprinkle the grated Parmesan on top and gently toss.
  3. Serve with a squeeze of lemon on top.

Notes

Control the sear with temperature; a properly preheated skillet yields a golden crust while keeping the interior moist. Rest chicken briefly after cooking to retain juices.
