  • 1.5 lbs boneless skinless chicken tenders You can also use boneless thighs for a juicier option.
  • 1 lbs baby carrots
  • 1.5 lbs Yukon gold potatoes, cut into wedges These creamy potatoes bring a buttery flavor; any waxy potatoes will work well too.
  • 0.5 cup salted butter, melted
  • 1 Tbsp minced garlic Use fresh garlic for better flavor.
  • Salt and pepper to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley

Method
 

Preparation
  1. Start by placing the chicken tenderloins in the center of your slow cooker. Leave ample room around them for the vegetables.
  2. On one side, arrange the Yukon gold potato wedges, followed by filling the other side with the lovely baby carrots.
  3. In a mixing bowl, combine melted butter, minced garlic, salt, pepper, dried thyme, and parsley.
  4. Drizzle the garlic butter mixture generously over the chicken and vegetables, ensuring they are well-coated. Then cover the slow cooker.
Cooking
  1. Cook on HIGH for 4 hours or LOW for 6-8 hours until the chicken is tender and the veggies are perfectly cooked. Serve hot.

Notes

Avoid overcooking and ensure chicken reaches an internal temperature of 165°F. Customize veggies as desired.
