  • 4 pieces boneless skinless chicken breasts (about 2 pounds) Choose even-thickness for uniform cooking.
  • 1/2 cup unsalted butter (melted) Use unsalted to control salting.
  • 1/2 cup freshly grated Parmesan cheese Freshly grated melts better than pre-grated.
  • 2 tablespoons minced garlic Fresh gives the best flavor.
  • 1 tablespoon dried Italian seasoning Can substitute with equal parts oregano, basil, and thyme.
  • 1/4 teaspoon onion powder Avoid using fresh grated onion.
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt Adjust to taste after baking.
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley For garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. Spray an 8"x11" baking dish well with non-stick cooking spray.
  3. Place the chicken breasts into the prepared baking dish. Set aside.
  4. In a medium bowl, stir together melted butter, Parmesan cheese, minced garlic, Italian seasoning, onion powder, garlic powder, salt, and pepper.
  5. Spread mixture evenly over raw chicken breasts.
Baking
  1. Place in oven to bake for 40 to 45 minutes, uncovered, until internal temperature reaches 165°F.
  2. Remove from the oven and sprinkle chopped parsley over the top.
  3. Let chicken rest for 5 minutes before serving.

Notes

For a crispy top, broil for 30 to 60 seconds at the end if desired. If edges brown too quickly, tent with foil for the first 25 to 30 minutes.
