  • 2 pounds baby potatoes (halved) Look for firm and smooth potatoes without sprouts.
  • 1 cup chicken broth
  • 1 cup heavy cream Full-fat cream gives the best results.
  • 1 cup freshly grated Parmesan cheese Freshly grated melts better and adds richer flavor.
  • 4 cloves garlic (minced)
  • 1 teaspoon Italian seasoning Adjust to taste.
  • to taste salt and pepper Season according to preference.
  • to taste fresh parsley for garnish Optional, for added color.

Method
 

Preparation
  1. Wash and halve the baby potatoes. Mince the garlic cloves and set aside.
Layering
  1. In the bottom of your crockpot, layer the halved baby potatoes. Season generously with salt, pepper, and Italian seasoning.
Adding Chicken
  1. Place the chicken breasts on top of the potatoes; season with additional salt and pepper.
Making the Sauce
  1. In a mixing bowl, whisk together the chicken broth, heavy cream, minced garlic, and half of the grated Parmesan cheese until smooth.
Combining
  1. Slowly pour the creamy mixture over the chicken and potatoes in the crockpot, ensuring everything is evenly covered.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
Finishing Touch
  1. Just before serving, sprinkle the remaining Parmesan cheese over the dish and allow it to melt.
Serving
  1. Garnish with fresh parsley if desired and serve hot, paired with crusty bread.
