  • 1/2 cup grated Parmesan cheese Use freshly grated for the best flavor.
  • 3/4 cup shredded Parmesan cheese Add before serving for extra meltiness.
Spices and Seasonings
  • 3 to 4 cloves garlic, minced Fresh garlic delivers a stronger flavor than powder.
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper
Liquid
  • 3/4 cup low-sodium chicken broth Use for Instant Pot version.

Method
 

Preparation
  1. Add the chicken pieces and chopped red potatoes to the slow cooker, ensuring they’re evenly spread out.
  2. Sprinkle in the minced garlic, garlic powder, Italian seasoning, salt, and pepper, and mix well.
  3. Drizzle the olive oil over the mixture, and gently stir to coat all ingredients evenly.
  4. Add the grated Parmesan cheese and mix thoroughly to coat everything.
Cooking
  1. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  2. Before serving, sprinkle the shredded Parmesan cheese over the top and allow it to melt slightly.

Notes

For added flavor, sear the chicken beforehand. Adjust seasoning to taste and modify cooking time based on slow cooker settings.
