Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts Opt for fresh, organic chicken for better flavor.
  • 1/4 cup olive oil Use extra virgin olive oil for a richer taste.
  • 2 pieces lemons, juiced Freshly squeezed lemon juice is recommended.
  • 3 cloves garlic, minced Adjust garlic to taste.
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Bowls
  • 1 cup cooked quinoa or rice Cook according to package instructions.
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1 piece red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • to taste Tzatziki sauce (store-bought or homemade)

Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken breasts and let marinate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Add the marinated chicken and cook for 6-7 minutes on each side, or until fully cooked.
  3. While the chicken cooks, prepare a serving of quinoa or rice according to package instructions.
  4. Dice the cucumber, halve the cherry tomatoes, and slice the red onion.
Assembly
  1. Start with the quinoa or rice as the base, then layer with sliced chicken, cucumbers, tomatoes, red onions, and crumbled feta cheese.
  2. Drizzle with Tzatziki sauce and sprinkle fresh parsley on top for added flavor.
