  • 1 ripe avocado ripe avocado Choose an avocado that yields slightly to pressure.
  • 1 cup diced vegetables (cucumber, bell pepper, celery, etc.) Use crunchy vegetables; drain watery ones.
  • 2 tablespoons lime juice Fresh lime juice is preferable.
  • Salt and pepper to taste Use cautiously and adjust to taste.
  • Optional: chopped herbs (cilantro, parsley) Add for extra flavor at end.
  • Greek yogurt or sour cream Use for creaminess if desired.

Preparation
  1. In a bowl, mash the avocado with lime juice, salt, and pepper until smooth.
  2. Add the shredded chicken and diced vegetables to the bowl.
  3. Mix gently until everything is well combined.
  4. Optional: Stir in Greek yogurt or sour cream for extra creaminess.
  5. Serve immediately or refrigerate for meal prep.

Notes

Press plastic wrap directly onto the salad surface if making ahead to minimize air and slow browning. If you prefer chunkier avocado, mash half and leave half diced.
