Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into 1-inch cubes. Toss with olive oil, salt, pepper, garlic powder, and paprika.
Roasting and Cooking
  1. Spread the sweet potatoes on a lined baking sheet and roast for 25-30 minutes until tender and golden brown.
  2. Cook the rice according to the package instructions using your preferred method.
  3. Season the chicken breasts with salt, pepper, and additional spices. Cook in a skillet over medium heat for 6-7 minutes per side until fully cooked.
Assembly
  1. Layer the cooked rice at the bottom of your bowls.
  2. Add the roasted sweet potatoes followed by the sliced chicken.
  3. Garnish with fresh spinach and avocado slices.
  4. Serve warm and enjoy!

Notes

For meal prep, cook extra chicken and rice to use throughout the week. For a vegan option, substitute chicken with chickpeas or tofu. Alternatives like quinoa or farro can replace rice.
