  • 2 cups cooked chicken, shredded Leftover rotisserie chicken works great and saves time.
  • 3 cups cooked pasta (penne or rotini) Penne or rotini holds the sauce well, feel free to try other shapes.
  • 2 cups shredded cheese (cheddar or mozzarella) Blend different kinds of cheese for more depth in flavor.
  • 1 can (10.5 oz) cream of chicken soup Substitute with cream of mushroom soup for a vegetarian option.
  • 1 cup milk Consider using half-and-half for a creamier version.
  • 1 cup frozen mixed vegetables (optional) Fresh vegetables can also be used.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (for topping, optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked pasta, 1.5 cups of cheese, cream of chicken soup, milk, frozen mixed veggies (if using), garlic powder, onion powder, salt, and pepper. Stir until everything is well blended.
  3. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  4. Top with the remaining cheese and breadcrumbs for a delightful crunch.
Baking
  1. Bake in the preheated oven for 25-30 minutes, until the casserole is bubbly and the top is golden brown.
  2. Allow to cool for a few minutes before serving.

Notes

For the best texture, sprinkle your cheese on top in the last 10 minutes of baking. This dish tastes even better the next day as flavors meld and deepen.
