Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Look for plump, fresh chicken breasts for the best flavor and texture.
  • 1/3 cup honey Choose high-quality honey for a richer taste. Local honey is often recommended for its unique flavors.
  • 1/4 cup mustard (Dijon or yellow) Dijon adds a nice kick, while yellow mustard gives a milder flavor profile.
  • 2 tablespoons olive oil Extra virgin olive oil can enhance the overall flavor but regular olive oil works just as well.
  • to taste Salt
  • to taste Pepper

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together honey, mustard, olive oil, salt, and pepper until smooth.
  3. Dip each chicken breast in the honey mustard mixture, ensuring they are well-coated.
  4. Place the coated chicken breasts in a greased baking dish, spreading them out evenly.
Cooking
  1. Slide the dish into the preheated oven and bake for 25 to 30 minutes or until the chicken is fully cooked and has a beautiful glaze.
  2. Remove from the oven, let it rest for a few minutes, then serve warm.

Notes

For extra flavor, marinate the chicken in the honey mustard mixture for about 30 minutes before baking. Broiling for the last few minutes can give a beautiful golden finish. This dish can also be made with tofu for a vegan version or with cayenne pepper for a spicy twist.
