Ingredients

Main Ingredients
  • 1.5 lb chicken breast (about 4, 6 oz. pieces) Chicken thighs can work too.
  • 1 tsp dried oregano Fresh herbs can be used for a more robust flavor.
  • 1 tsp paprika
  • ¼ tsp onion powder
  • ½ tsp pepper
  • ½ tsp salt
  • ¼ cup honey
  • ¼ cup Dijon mustard Substitute with yellow mustard for a milder taste.
  • 2 Tbsp butter (melted)
  • 2-3 cloves garlic (minced) Fresh garlic adds a punch, but garlic powder works in a pinch.
  • ¼ cup heavy cream For a lighter option, use a milk alternative or yogurt.
  • 2 Tbsp cornstarch Optional for thickening sauce.
  • 4 Tbsp cold water Optional for thickening sauce.

Method

Preparation
  1. Pat the chicken dry with a paper towel to ensure even cooking.
  2. Season the chicken with salt, pepper, oregano, onion powder, and paprika, rubbing the spices in generously.
  3. In a bowl, mix together honey, Dijon mustard, minced garlic, and melted butter until well combined.
  4. Pour the honey mustard sauce over the seasoned chicken in the crockpot, ensuring everything is well-coated.
Cooking
  1. Cook on LOW for about 3 hours, or until the chicken reaches an internal temperature of 165°F.
  2. Once cooked, shred the chicken using two forks, allowing it to soak in the sauce.
  3. Stir in heavy cream about 30 minutes before serving for extra creaminess.
  4. If you prefer a thicker sauce, mix cornstarch with cold water and stir it into the pot for another 30 minutes.

Notes

Allow the chicken to marinate in the sauce for a richer flavor. Adjust cornstarch for desired sauce thickness gradually to avoid lumps.
