Ingredients

Coffee Mixture
  • 1 cup strong brewed coffee Use freshly brewed strong coffee or espresso for best results.
  • 1/2 cup Irish cream flavored creamer Substitute with nonalcoholic Irish cream syrup if needed.
Cream Layer
  • 2 cups mascarpone cheese Choose full-fat mascarpone for best texture.
  • 1 cup heavy whipping cream Use chilled for fluffier peaks.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
Ladyfinger Base
  • 24 pieces ladyfinger cookies Fresh, crisp ladyfingers are best for soaking.
  • Cocoa powder for dusting
  • Chocolate shavings for garnish (optional)

Method

Assembly
  1. In a shallow dish, combine the brewed coffee and Irish cream flavored creamer. Dip each ladyfinger into the mixture briefly, ensuring they don’t become soggy.
  2. Arrange a layer of soaked ladyfingers in a 9x13 inch dish.
  3. In a large bowl, whisk together the mascarpone cheese, heavy cream, sugar, and vanilla extract until soft peaks form.
  4. Spread half of the mascarpone mixture over the layer of ladyfingers.
  5. Add another layer of soaked ladyfingers on top, followed by the remaining mascarpone mixture.
  6. Cover and refrigerate for at least 4 hours, or preferably overnight.
  7. Before serving, dust the top with cocoa powder and garnish with chocolate shavings if desired.

Notes
