  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon Italian seasoning

  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi Fresh preferred for texture.
  • 2 cups spinach Fresh is best for nutrition.
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving Enhances flavor when melted.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat until it shimmers.
  2. Add the diced onion, minced garlic, carrots, and celery. Sauté until the vegetables soften, about 5 minutes.
  3. Mix in the Italian seasoning and let it infuse the ingredients.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Stir in the shredded chicken and gnocchi. Cook until the gnocchi floats.
  6. Add the spinach and let it simmer until wilted.
  7. Season with salt and pepper to taste.
  8. Serve in bowls topped with grated Parmesan cheese.

Notes

For extra creaminess, stir in a splash of cream or a dollop of sour cream before serving. Adjust seasoning to your taste.
