  • 1 pound beef (chuck or brisket) Chuck or brisket are ideal for slow cooking as they become tender.
  • 4 cups beef broth Opt for low-sodium beef broth.
  • 2 tablespoons soy sauce
  • 2 tablespoons gochujang (Korean chili paste) Adjust according to spice tolerance.
For the Vegetables
  • 1 onion sliced onion
  • 2 carrots sliced carrots
  • 1 bell pepper sliced bell pepper
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon sesame oil
For the Noodles
  • 8 ounces noodles (egg noodles or rice noodles) Egg noodles provide chewiness; choose based on preference.
For Seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish For a fresh, crunchy contrast.

Preparation
  1. Begin by placing the beef in the slow cooker. Pour in the beef broth, followed by the soy sauce and gochujang.
  2. Add the sliced onion, carrots, and bell pepper to the cooker, then sprinkle in the minced garlic, grated ginger, and sesame oil. Don’t forget a dash of salt and pepper.
  3. Stir everything together gently to ensure all the ingredients are well mixed.
Cooking
  1. Cover the slow cooker and set it on low heat for 6-8 hours until the beef becomes tender.
  2. About 30 minutes before serving, cook the noodles according to the package instructions until just tender.
  3. Once cooked, drain the noodles and fold them into the slow cooker, ensuring they soak up the delicious broth.
  4. Serve hot, garnished with chopped green onions.

Notes

This dish is even better the next day after the flavors have had time to meld. Customize by adding different vegetables or adjusting spice levels.
