Ingredients

Main Ingredients
  • 4 pieces boneless skinless chicken breasts Opt for organic, free-range chicken for better flavor and freshness.
  • 1 cup breadcrumbs Use Panko breadcrumbs for extra crunch if desired.
  • 1 cup grated Parmesan cheese Freshly grated Parmesan offers a more vibrant flavor.
  • 1 cup shredded mozzarella cheese Consider adding more mozzarella during the last few minutes of baking for an extra cheesy finish.
  • 1/2 cup all-purpose flour Season lightly with salt and pepper.
  • 2 large eggs For a vegan option, consider using a flaxseed mixture or aquafaba.
  • 1/4 cup milk
  • 2 cloves garlic, minced Reduce garlic for a milder flavor that appeals to kids.
  • 1 teaspoon Italian seasoning Feel free to adjust based on taste preferences.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil Ensure oil is hot enough for a crispy exterior.

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it.
  2. In a shallow dish, combine the breadcrumbs, half of the grated Parmesan, Italian seasoning, salt, and pepper.
  3. In a separate bowl, whisk together the eggs and milk until well blended.
  4. Place the flour in a third shallow dish and season it lightly with salt and pepper.
  5. Take one chicken breast and dredge it in the flour, ensuring it’s coated evenly, then dip it into the egg mixture, followed by the breadcrumb mixture. Repeat for all chicken breasts.
Cooking
  1. Heat olive oil in a large skillet over medium heat. Cook each breaded chicken breast for 3-4 minutes on each side, until golden brown.
  2. Transfer the chicken to the prepared baking dish. In a small bowl, mix the remaining Parmesan, mozzarella, and minced garlic; top the cooked chicken with this mixture.
  3. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the cheese is bubbly and golden.

Notes

For best results, use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F for optimal juiciness. Allow leftovers to cool and store in aluminum foil for up to 3 days.
